ABOUT THE ROLE
As a Sous Chef at Qudos Bank Arena, you will play a crucial role in assisting the Executive Chef and Head Chef in ensuring the efficient and profitable operation of all food production activities within the Arena. Your dedication to maintaining the highest standards of food quality and presentation, along with achieving food and labor cost targets, will contribute to the overall customer satisfaction and business success.
POSITION RESPONSIBILITIES
- Prepare, cook and serve food in accordance with menus ensuring a high level of quality and presentation is achieved at all times according to agreed standards.
- Meet agreed food and labour cost targets in conjunction with the Executive and Head Chef.
- Monitor and sign off on Casual employee’s wages daily.
- Work in conjunction with the Executive Chef and Head Chef to create and develop menu concepts that strengthen the Arena’s business ambitions.
- Maintain HACCP procedures and practises.
- Foster sound relationships with front-of-house catering and kitchen team members.
- Monitor and report maintenance issues (via the FMX system) on time.
- Maintain the cleanliness and organisation of all catering, retail and storage areas.
- Provide continual feedback to the Executive Chef and Head Chef on kitchen team members’ performance.
- Provide continual feedback to the Executive Chef and Head Chef regarding food quality and presentation.
- Attend and oversee training and inductions for new and existing Casual team members when required.
- Assist the Head Chef with ordering, stock control and monthly stocktake.
- Assist with stock deliveries into the main store as required from time to time.
- Ensure all systems, policies, procedures and standards as set by the Executive Chef and Head Chef are implemented and maintained.
- Deputise for the Head Chef if required.
ABOUT YOU
- Proven experience as a Sous Chef or a similar role.
- Strong culinary skills and knowledge of food safety standards.
- Excellent communication and teamwork abilities.
- Flexibility and adaptability in a fast-paced, dynamic environment.
- A passion for culinary innovation and menu development.
- HACCP certification is a plus.
- Availability to work evenings, weekends, and holidays.
